Nodoguro has a location on NE 23rd Avenue, described as “a “reservation only” dinner restaurant.” Nodoguro Zen would be the second addition to the concept.
“Since launching Nodoguro nearly a decade ago, Ryan and Elena Roadhouse have popped up at Portland restaurants, presented a “Twin Peaks”-themed dinner for director David Lynch at the old Château Marmont in Los Angeles, and crafted an izakaya menu inspired by volcanic soil for a Canary Islands conference of some of Europe’s most celebrated chefs,” an article from Oregon Live states.
Another 2016 article from Portland Monthly adds “In a bare-bones space on Hawthorne with changing decorations, inspired themes, and a dinner-party atmosphere, Nodoguro quickly evolved into a bona fide destination for freestyle Japanese cooking and extraordinary sushi. At its heart: expert craft, out-of-the-box thinking (food to mood), and super personalized service.”
Worldcanic tells us more about Ryan by stating, “Although he has not traveled much outside the United States, Ryan Roadhouse has years of cookery experience under his belt, mainly in Japanese omakase and kaiseki restaurants.”
“He quickly specialized in this variety of cooking in his early years learning the trade at the Urasawa restaurant in Beverly Hills, which boasts two Michelin stars. Subsequently, he worked only as chef or executive chef, at the Mizu Restaurant and Sudachi in Jackson Hole, at Bamboo and Masu in Portland, or Seattle’s Rock Box, among others.”
“Since 2014 he has run the kitchens at his own business, Nodoguro (Portland, Oregon), where he offers up omakase fare using local ingredients, since he drew up a seeding plan himself for a plantation he runs alongside a farmer. He was declared Rising Star Chef by Portland Monthly Magazine.”
