According to a recent permit filing, Caseus Diem has filed for a Richmond area location at 3320 SE Division Street.

“Our goal opening date will be sometime in mid-July. We will have a fun, colorful, and modern take on a cheese shop! Customers will have the opportunity to try 75+ cheeses. 12 of those cheeses will be available for building your own cheese boards. Accouterments that are perfect for any cheese pairing will also be available; jams, honeys, crackers, breads, salamis, etc.,” the owner, Han Schmidt, told What Now Portland.

“Nearly 10 years ago I started my journey into the world of cheese in a little shop in Carmel-by-the-Sea, CA. I didn’t have any food experience before starting there and working there sparked a lifelong passion. Moving from the central coast to SoCal and finally up to Portland this passion followed.”

“After 2020 and working in a couple of grocery stores, I realized that I missed the human connection that I had at that first cheese shop. There’s something so special about seeing somebody’s face light up when they try their new favorite cheese. There’s also the storytelling. You get to weave factual tales of how the cheese was made, and the history, taking people on a journey around the world without the need of a passport.”

“All of this led me to realize there is a need for more of that in Portland. This brings us to the creation of Caseus Diem, which translates to Cheese The Day, in Latin. I wanted a cheesy space where all are welcome and I’m fortunate enough to make this a reality. I’m so excited to share it with the people of Portland.”
