According to a recent permit filing, Fat Kitty Ramen has filed for a location at 7847 SW Capitol Highway.

A representative of Fat Kitty Ramen was not able to provide additional information at this time upon What Now Portland’s request.

While an official opening date has yet to be confirmed, according to the permit filing, the planned days of operation will be every day from 4 PM to 10 PM, with Mondays and Tuesdays closed during the slower months.

According to Loop Net, the address listed on Fat Kitty Ramen’s permit is a part of Multnomah Village. The property was built in 1924 and is listed to have a gross leasable area of 2,239 square feet of space.

Listed on the permit is a representative that represents the owners as a management company. They stated in an email to What Now Portland that “The business leader of Fat Kitty Ramen, Samantha Holliday.”

“Fat Kitty Ramen wouldn’t exist without Sam, as she is the heart and soul of the brand and will be the one to hold interviews when the time is right. We are a couple of weeks out from opening still…”
