According to a recent permit filing, Mokdong Gimbap will soon open in the Hawthorne area, located at 3553 SE Hawthorne Blvd.

A representative of Mokdong Gimbap was not immediately available for commentary upon What Now Portland’s request.

While an official opening date as well as what Mokdong Gimbap plans on offering, according to the permit filing, the planned days of operation are every day from 11 AM to 9 PM. The owner and business applicant is listed as Soonok Spliethof.

“Mokdong Gimbap” likely refers to a type of gimbap (or kimbap), which is a Korean dish made with steamed white rice and various other ingredients, such as vegetables, pickled radishes, and sometimes meat, rolled in sheets of seaweed. “Mokdong” could be a specific location, name, or reference to a style or variation of gimbap.
