According to a recent permit filing, Pop Pizza will expand to another location in Cedar Mill at 12545 NW Cornell RD #102.

A representative of Pop Pizza was not immediately available for commentary upon What Now Portland’s request.

While an official opening date has yet to be confirmed, according to Open Corporates, Pop Pizza was filed under Something Something LLC.

According to an article from Oregon Live written in 2020, “Pop, who has family in Detroit, will open the new pizzeria at Southeast Morrison Street and Sixth Avenue, in the same building as our 2019 Rising Star restaurant, Berlu. The space was originally intended as a showcase for Nuvrei’s — spoiler alert — very good croissants and other laminated pastries. But after becoming a parent for the first time this summer, Pop felt he needed a “concept that’s going to be a home run out of the gate.”

At Pop Pizza, those pan pizzas will be pre-cut and topped with a wide array of toppings reflecting its founders’ international backgrounds. Arlig is Swedish. Pop was born in Romania, and looks forward to playing with Eastern European flavors on his pies, including cabbage, caraway, and sausage. Mainly, he’s aiming for comfort food, with nostalgia for the simple pleasures at classic Detroit pizzerias such as Cloverleaf Bar.”

Another article from Oregon Live written in the same year adds, “Pop spent the past few months dialing in a minimum two-day fermented dough that with a “thin eggshell crunch” that somehow still “feels substantial” in the hand, Pop says. Most importantly, the pies carry their temperature well, an essential for home delivery, he says.”
