According to a recent article from the Portland Eater, Bauman’s will open its first Portland cidery and tasting room at 930 SE Oak Street.

“We will begin cidermaking operations in the new space in January, and the public-facing taproom will open in the spring of 2024. While the future taproom is still very much in development, patrons can look forward to a menu sourced directly from produce grown on Bauman’s Farm in Gervais, Oregon,” founder and head cidermaker, Christine Walter, told What Now Portland.

“The new location will have 30 taps and a full-service kitchen, so we have a lot of space to work with and get creative! It’s a large space, but we want it to feel cozy, warm, and welcoming, like a piece of the farm in the city. When it’s open, the taproom will be one of Portland’s largest dedicated cider spaces with a great outdoor patio for watching the sunset over downtown’s skyline,” Christine adds.

“The new facility will significantly expand Bauman Cider’s impact. Their current production space, located on Bauman’s Farm in Gervais, Oregon, will maintain its cider operations and public tasting room and will focus on crafting Bauman’s harvest-driven, small-batch ciders, like the award-winning Mountain Rose Single Varietal.”

“The Portland location will focus on modern cider styles, to meet the growing demand for all of Bauman’s offerings throughout the Pacific Northwest. For Bauman’s Cider, this move builds an integral bridge from the farm to the larger cider-drinking community. While the core food program is still in development, guests can expect a menu sourced directly from produce grown on Bauman’s Farm,” a press release from Bauman’s states.

According to the Portland Eater article, “The family had been fresh-pressing cider for decades, but in 2016, head cidermaker Christine Bauman Walter founded the farm’s hard cider company, producing everything from single-varietal ciders to more inventive ciders with flavors like strawberry mojito and guava grapefruit.”

Bauman’s company website tells patrons more about its history, stating, “Christine began making cider in 2016, drawing from her wholesome childhood experiences making cider from a hand-cranked cider press with Grandpa Clyde and working at her uncle’s fresh market stand. In her effort to perfect the modern version of Great-Grandpa Stephen’s original hard cider, Bauman’s Cider was born.”

“This blending of modern cidermaking with tried-and-true traditional methods developed on the family farm results in a hard cider which we think Stephen & Clyde would be proud of. Our cider is made from apples and other fruits grown and harvested on our century farm whenever possible.”
