According to a recent article from Bridgetown Bites, Chop Chop Food Carts will soon open in the Meadowland Shopping Center at 17150 SE Powell Boulevard.

A representative of Chop Chop was not immediately available for commentary upon What Now Portland’s request.

According to the Bridgetown Bites article, Chop Chop is slated to open sometime in the spring of this year. “It looks like preliminary work was done last summer by Qualico Construction Services.”

Chop Chop’s website states, “Chop Chop Food Carts is a first-generation immigrant-owned food pod. The owners have been Pacific Northwest locals since the 90s. The concept of our food pod emerged in June 2019 in response to a disheartening news article highlighting the displacement of numerous small food cart businesses from the downtown food cart pod to make way for hotel development.”

“In August 2019, we collectively pooled our savings and secured substantial loans to acquire a space to host food carts. We aimed to create an environment where small business food cart owners could thrive, particularly in an area of town with limited food choices.”

“Since the inception of the idea in March 2020, the food cart pod has encountered various challenges related to the COVID-19 pandemic, delaying the project’s opening. As of 2024, we are on the verge of completing construction and are excited to welcome vendors and the community in the spring. We have partnered with food cart vendors to bring vibrancy to the local community.”
