A representative of Fat Kitty Ramen, who is listed on the permit filing, represents the owners as a management company. They stated in an email to What Now Portland that “the business leader of Fat Kitty Ramen is Samantha Holliday.”

“Fat Kitty Ramen wouldn’t exist without Sam, as she is the heart and soul of the brand and will be the one to hold interviews when the time is right. We are a couple of weeks out from opening still and don’t have a press kit to release yet.”

Loop Net states that the property was built in 1925 and was approximately 7,300 square feet of space. Compstak adds “Built in 1925, this 1-story retail property spans 8,550 SQFT.

“Notable tenants in the building include Deadstock Coffee and Bae’s Hot Chicken. CompStak has 2 lease comps for this property, for a deal signed in 2020.”

Edit: A representative of Fat Kitty Ramen requested the removal of their name after the article was initially published.
