A representative of Kate’s Ice Cream was not immediately available for commentary upon What Now Portland’s request.

According to the article, the goal opening date for the second location is sometime in the beginning of June. “Kate Ice Cream plans a second location for her vegan and gluten-free frozen treats, and founder Kate Williams said she is up against a hard deadline.”

“She is currently building out the 1,000-square-foot location, which was previously a tasting room for Westward Whiskey. Williams opened her first shop in Portland two years ago at 3713 N. Mississippi Ave.”

“Once she had been in that space for a year she started planning for a second location. She waited for the one-year milestone to gauge how her seasonal business would perform.”

“Williams’ first foray into ice cream as a business was in 2014 in Cambridge, Massachusetts. She landed in Portland in 2017 and saw a city that would welcome her vegan and gluten-free products. She initially started selling Kate’s Ice Cream at the Portland Farmers Market.”

According to the company’s website, “Originally from Lafayette, Louisiana, Kate moved to Cambridge, MA with her husband in 2013. She launched her first ice cream business, Scoop Sights in 2014, making dairy-free ice cream popsicles and selling them out of a tricycle at local farmers markets in the Boston area.”

“Wanting to continue her entrepreneurial ice cream journey, she founded Kate’s Ice Cream in 2019. Kate’s focuses on elevating the childhood classics, collaborating with local, woman, and minority-owned businesses, and using the bountiful farms of the Pacific Northwest to make seasonal ice creams.”

“Kate also founded Kate’s Waffle Cones in 2019, providing her recipe of gluten-free waffle cone mixes to ice cream shops around the country. After hearing a 7-year-old boy tell her he had never had a waffle cone in his life, she set out on a mission to create inclusive experiences through plant-based and gluten-free foods. Her goal is that everyone can have the classic ice cream shop experience that many grew up with.”
